Green(s) Masala Pulao

I adapted this dish from my dad who made coriander rice last week and it was awesome. This spicy green masala pulao made from palak, fresh mint, fresh coriander and green chilly puree is a tangy and aromatic pulao.

2 Cups – Basmati Rice pre soaked for 15 min in plain water and drained
1 Bunch – Palak Leaves finely chopped
1 Cup – Mint leaves
2 – Onions chopped finely
1 tbsp – Ginger garlic paste
2tbsp – Ghee/Butter/Oil
1 ½ tsp – Salt
3 ¼ cups – Water
Masala Paste
1 – Onion
5 – Green Chilies
1 Cup – Coriander Leaves
Dry Masala
1 tsp – Garam Masala powder
1- Green Cardamom Crushed
2 – Cloves
1- Bay leaf


Prepare the paste with some water to it.

In a heavy bottomed vessel, heat oil add dry masalas one by one fry it and add the chopped onions sauté it until soft add ginger garlic paste cook it for 1 min then add chopped tomatoes and garam masala powder and cook until soft.

Add chopped palak and mix it with salt. Add the masala paste and stir it add rice and water.

Close the pan with lid and cook until rice is done.

I served this pulao with white onion raitha and roasted baby potatoes this pulao had a wonderful aroma and tasted grt.
