Sprouted Black Chana – Paratha n Curry

Sprouted black chana regularly taken reduces complications that arise in diabetic patients. It is rich in protein, fibers, minerals regular intake of sprouted black chana helps in reduction of taking insulin injections for diabetics. It can be cooked or even eaten raw.

Ingredients for dough:
2 cups – Wheat flour
Salt
Water

Method:
Mix the flour with salt. Add water and knead into dough. Cover and keep aside.

Ingredients for stuffing:
1 cup – Sprouted Black chana
¼ tsp – Green chilli paste
2 tbsp – Coriander leaves, finely chopped
½ tsp – Ginger, minced
½ tsp – Cumin powder
Salt (to taste)
Oil

Method:
Boil the sprouted black chana with required salt, grind them without adding water.

Heat oil in a pan and add the ginger, green chilli coriander, saute for a minute add the ground chana and saute.

Now add cumin powder and mix well, add salt. Let it cool.

Divide the dough into balls of equal size.

Place the stuffing in the center and fold from all corners and seal it. Roll out into a thin circle.

Add oil / butter in a tawa place the parathas and cook on both sides.

Ingredients for Curry:
1 cup – Sprouted black chana
2 – Onions, finely chopped
2 – Tomatoes, finely chopped
1” – Ginger
3 – Green chillies
3- Garlic cloves
½ tsp – Red chilli powder
1/2 tsp – Coriander powder
1 tsp – Chana masala powder
1/2 tsp – Garam masala powder
1 tbsp – Kasuri Methi
1/2 tsp – Cumin seeds
1 tbsp – Oil
Salt to taste

Method:
Cook sprouted black chana with enough water and salt in a pressure cooker.

Heat oil in a pan and add cumin seeds once they crackle add onion and sauté till brown.

Add tomatoes, ginger, garlic and green chillies and the spices. Fry till oil begins to separate from the masala.

Add cooked sprouted black chana also add the cooked chana water. 
               
Cover and cook for 7-8 minutes.

Garnish and Serve it.
