Wheat balls n veggies in penne pasta

Pasta is an Italian dish, the very main ingredient is olive oil. Olive oil has very less calories and very high in antioxidants. Since the acidity level in olive oil is low digestion is easy. Its not that Olive oil has to be used for Italian cooking nowadays in Indian cooking too olive oil has become a stable oil for everyday cooking.

Any vegetables available for the season can be used.Have added wheat balls to the pasta to make it to a complete meal.
Ingredients for wheat balls:
1 cup – Wheat flour
½ cup – Water
½ tsp – Garam Masala powder
1 tsp – Red chilly powder
½ tsp – Turmeric powder
¾ tsp – Salt
1 tsp – Oil
1 – Onion, finely chopped
4 stems – Coriander leaves, finely chopped
Mix all the above ingredients to a soft dough.
Roll the dough into small balls.
Boil 5 cups of water adding a little salt to it. When the water boils, add the wheat balls.
In approx 5 – 7 minutes the wheat balls floats on top of the boiling water (right time to remove them) they are done.
These balls can also be served as a chat by adding some raw onions, tomatoes, raw mangoes and basic spices.
Ingredients for veggies pasta:
1 cup – Penne pasta, cooked as per instructions on pack
2 tbsp – Extra Virgin Olive oil
4 cloves – Garlic, minced
½ – Red and yellow bell peppers, chopped
½ – Carrot, chopped
½ cup – Sweet corn
½ cup – Green peas
1 tsp – Dried Italian herbs
¼ cup – Parmesan, grated
½ tsp – Red chilly flakes
Salt and grounded pepper

Wash and clean the veggies in cold water and chop them.
In a pan add 2 tbsp of olive oil, once hot add the garlic pods, once they are roasted add the chopped veggies one by one and sauté for 2 min.
Add chilli flakes, dried herbs, salt and pepper. Make sure the veggies are well coated with the spices.
Saute them and add the cooked wheat balls to the veggies.
Cook the pasta according to the directions.
Add the pasta to the veggies and sauté for another 1 min.
This pasta can be served both hot and cold! Sprinkle some grated parmesan cheese and fresh basil on top before serving!
