Penne Aglio Olio with Corn, Peppers n Papaya Delight

The summer has begun and it is getting hotter day by day in Chennai. What more do we prefer for dinners obviously a quick fix ones and some thirst quenching drinks. So decided to make some simple pasta but also wanted to add few left over vegetables. So here landed with Penne aglio olio n some drink with papaya.
This pasta dish is basically a combination of garlic, olive oil and dried red chilli flakes with strong flavors also made drink for papaya passionate person like me n my hubby!!!
INGREDIENTS:
2 cups- Penne Pasta
8 – Cloves of garlic, chopped
1 tbsp – Dried red chilli flakes
1 tsp – Dried Italian herbs
3 tbsp – Extra Virgin Olive oil
Handful of Fresh coriander / Parsley chopped up coarsely
Salt and Pepper
METHOD:
Boil water in a deep pot, when the water starts boiling, add 1 tbsp salt, and add the pasta. Cook the pasta until al dente.
In a pan heat the olive oil and add the garlic till it reaches golden brown in color. Add the chilli, and reduce the heat.
Now add the veggies and saute for a minute.
When the penne is cooked, drain well, and add to the pan, add dried Italian herbs and add the coriander / parsley season with salt and pepper, and serve. 
Papaya Delight is a amazing drink!!!
Ingredients:
1 cup – Papaya Cubes
½ cup – Plain Yogurt
¼ tsp – Cardamom Powder
1 tbsp – Sugar
Method:
Combine all the ingredients together and blend in a mixer till smooth.
Add few papaya cubes on the top and serve chill!!!
