Methi Cornmeal Dosa n Wheat Rava Dosa

Veggies which are not loved by the family can be added to dosa or idli batter. Also left over veggies can be sauté with some basic seasonings added with wheat flour and made to dosa. During summer I always prefer to prepare quick dishes. Both these dosas are similar to rava dosa and tastes perfect.

Ingredients for methi corn meal dosa
1 cup – Cornmeal
1 cup – Rice flour & Urad dhal batter(5:1 ratio)
1 cup – Fresh Methi, washed and chopped
1 – Onion, finely chopped
1- Tomato, finely chopped
2 – Green chillies, chopped
1” – Ginger, grated
1 sprig – Fresh coriander, chopped
½ tsp – Mustard seeds
Oil
Method
Heat little oil in a pan, add mustard once it cracks add onion, green chillies, ginger sauté till onion becomes transparent.

Add chopped tomatoes and chopped methi leaves season with salt and hing.  

Saute for 2 min and switch off the stove.

In a mixing bowl, add batter and cornmeal, salt and 1 cup water to make it thin. Add the sauted veggies to the batter mix well and rest for 20 – 30 min.

Heat nonstick pan, pour this batter, spread them as a dosa, cook on both sides and serve hot.

Ingredients for Wheat Rava Dosa
1 ¾ cup – Broken Wheat Rava
1 cup – Rice flour & Urad dhal batter(5:1 ratio)
1 – Onion, finely chopped
2 – Green chillies, finely chopped
1” Ginger, finely chopped
1 sprig – Curry leaves
Hing – a pinch
½ tsp – Cumin seeds
½ tsp – Mustard seeds
Oil and Salt
Method:
Mix wheat rava and the batter add hing and salt and mix well.

Heat oil in a pan, add mustard and cumin seeds and wait till it splutters. 

Now add curry leaves, chopped onion, green chillies and ginger sauté for a min and add to the batter.

Add 2 cups water to the batter to make it thin not too watery. Rest the batter for 20 min.

Heat nonstick pan, pour this batter, spread them as a dosa, cook on both sides and serve hot with podi or any chutney.
