Back from my holidays!!! Summer is at its peak in Chennai so quick meal on a Sunday is the best!!! So made moong sprouts palak masala rice n curry leaves potato curry. These dishes were arrived on cleaning my fridge.
1 ½ cup – Basmati Rice, pre soaked for 10 min
2 cups – Palak, blanched and chopped
½ cup – Moong Sprouts
½ cup – Mushroom, chopped
1 big – Onion, chopped
4 – Green chilies, slit
2 – Tomatoes, chopped
1 tsp – Ginger garlic paste
¼ tsp – Jeera powder
¼ tsp – Pepper powder
¼ tsp – Red chilly powder
1 tsp – Shahi Biriyani Masala
2 tsp – Oil
Salt – As req
Heat oil in a heavy bottomed vessel fry the shahi biriyani masala add onions, ginger garlic paste, green chillies and salt.
Cook until the onions are done add chopped tomatoes once it softens add chopped palak, mushroom and sauté add moong sprouts and add red chilly powder, pepper powder and jeera powder and close the lid for 1 min.
Now add the rice to the veggies and add enough water cook until the rice get well cooked and water gets completely absorbed.
Serve with raitas or spicy curries.
Curry leaves potato curry
Happened to see this dish long time back in some tv channel but was not sure of the exact ingredients but tried my best n it was a hit..
1 cup – Boiled potato
¼ tsp – Mustard seeds n jeera
Salt – as req
1 tsp – Oil
To grind to a paste-
¼ cup – Coconut
½ cup – Curry leaves
1/4” – Ginger
3 – Green chillies
Grind the ingredients required to a smooth paste with some water.
In a pan add oil once the mustard and jeera splutters add potatoes and then add the paste and salt.
Stir it and cook it covered until the water from the paste is absorbed and the masala is cooked.
Serve with above rice n enjoy!!!
