Parathas are always filling ones!! Side dishes are not mandatory, pickle n curd are the best companions for parathas.
Have made parathas with black chana, veggies, paneer and now decided on these chana dhal. The best paratha ever made by me were these they were so filling n it blended so well with the curry.
For the paratha:
2 cups – Wheat flour
1 tsp – Salt
1 cup – Water
For the stuffing:
1/2 cup – Channa dal
½ tsp – Grated ginger
1 – Green chilli
Pinch of asafoetida
1/2 tsp – Ajwain /thymol seeds
3 stems – Fresh Coriander, chopped
2 tbsp – Ghee
Make the dough for paratha and rest for 5 min.
Soak dhal for 10 min and in a cooker add dhal, salt and some water and cook for 3 whistles. Drain water and let it cool.
In a mixer add the dhal, grated ginger, green chilli, asafoetida, ajwain, chopped fresh coriander and salt.
Blend them to smooth paste without adding water.
Now divide the dough into equal shaped balls and roll out into a circle place spoonful of the mixture in the center sprinkle flour and fold them and roll them as parathas.
Place on the tava add ghee and cook until it’s done.
For Broccoli soy flakes curry:
1 – Broccoli, chopped
½ cup – Soy flakes (boiled in how water with some salt for couple of minutes and drained)
1 – Red bell pepper, cut into squares
1 – Onion, finely chopped
1/2 tsp – Garlic crushed and 1/2 tsp – Ginger finely grated
1 tsp – Olive oil
1 tsp – Red chilli powder
1 tsp – Salt
Pinch of black pepper
In a pan add oil sauté onion, ginger and garlic until done and add broccoli sauté for another 2 min.
Add partly cooked soy flakes and bell pepper. Sauté them add salt, red chili powder and black pepper mix it just sprinkle some water and close the lid for 3 mins.
It’s done and ready to be served with paratha.
