Cracked Wheat Pongal n Tomato Ghotsu

Cracked wheat is a very nutritious grain and it’s gaining popularity since the Glycemic index in cracked wheat is lower it helps people suffering with high levels of diabetes mellitus by providing a healthy living.

Few of my dear ones who were suffering with high diabetic mellitus have substituted cracked wheat for rice since there are considerable drop in thr sugar levels.

Always bored with preparing wheat upma, wheat idly and wheat dosa tried pongal and it was really delicious than the rice pongal!!! Tomato ghotsu this is a trademark dish of my MIL and my SH loves it only this way and even i started liking it so much.

Ingredients :
1 cup – Wheat Rava
½ cup – Moong dhal (soaked for 15 mins in enough water)
1” – Ginger
4 – Green chillies
6 – Cashewnuts
¼ tsp – Asafoetida
1 tsp – Whole pepper corns
1 tsp – Cumin
1 tbsp – Ghee
4 cups – Water

Roast the wheat rava until nice aroma comes add chopped green chilies and ginger add the pre soaked moong dhal add asafoetida, salt and water and cook for 3 whistles.

In a pan, heat ghee add the pepper and cumin and let it splutters now add the cashews fry it and switch it off add the curry leaves and now add it on the pongal and mix it.

Ingredients For Gotsu:
1 – Onions, finely chopped
6 – Tomatoes, finely chopped
¼ tsp – Turmeric powder 
1 tsp – Red Chilli powder
Pinch of Hing
2 tbsp – Fresh Coriander, finely chopped
½ tsp – Mustard seeds 
1 Stem – Curry leaves
2 tbsp – Oil
1 cup – Water

Procedure :
In a pan heat oil add mustard seeds and curry leaves, let them splutter. Then add the onions and sauté it for until it softens then add tomatoes and sauté.

Add salt, chilli powder, turmeric powder and hing and cook for another 4 min with 1 cup of water.

Add chopped coriander leaves and close the lid.

Serve it piping  hot with pongal.
