Corn Methi Shower

Methi / Fenugreek leaves and corn makes a perfect and delicious soup. It gives a thick texture and its totally healthy complete meal. Made this soup for my SH and he loved it.

What you need:
1 cup- Frozen Corn kernels
2 cups – Methi (picked and washed thoroughly)
1 no – Onion (roughly chopped)
2 cups – Veg Stock
2 nos – Green chillies
2 nos- Garlic cloves
1/4 cup – Milk
1/2 tsp – Crushed Black Pepper
1/4 tsp – Cumin powder
1 – Bay leaf
1″- Cinnamon
1 tbsp – Olive Oil
Salt as per reqd

How to make:
In a deep pan add olive oil add garlic, onions, bay leaf and cinnamon stick saute well.

Add in green chillies, corn and mix them well.

Now to the pan add methi leaves, salt and add veg stock and let them cook in simmer for 10 – 12 min.

Let the mixture cool, remove the bay leaf and cinnamon stick and then puree it in a blender. In the same pan add the pureed mixture if reqd add milk or veg stock add cumin powder, pepper powder and let it get cooked for a minute!! 

Serve hot with any bread!!!
