Cold Russian Beet Borscht

Borscht is an hearty and pleasant beetroot soup its originated from places like Ukraine, Poland n Russia. When these are really healthy changing it to suits our taste buds does not matter. 

What you need:
2 cups – Beet root (peeled  and roughly chopped)
1 cup – Thin Coconut milk
1 medium size – Onion (sliced)
2 pods – Garlic (minced)
1 tbsp – Ginger (peeled and grated)
2 cups – Vegetable stock
1 tsp – Extra Virgin Olive oil
Pinch of cinnamon powder
Salt and pepper as reqd

How to make:
In a heavy bottomed pan / cooker add oil once its hot add onions, garlic and ginger and cook for 2 – 3 minutes.

Add beetroot and vegetable stock and cook for 3 whistles /  20 – 30 mins. Remove from heat and let it cool.

Blend the cooked beetroot to soup consistency. Return it to the cooker / pan add coconut milk, cinnamon, salt and pepper and cook on low heat for a minute and switch off the stove.

Serve it cold!!

    I love soups, but have never heard or tried this one.
    This borscht has such a Barbie-Pink color, hehe, so attractive!
