Minestrone soup recipe makes a healthy and complete dinner!!

What you need:
1 cup – Pasta (al dente)
1 no – Onion, chopped
1 cup – Broccoli florets
2 nos – Carrots, diced
1/2 cup – Bean sprouts (or any sprout)
1- Zucchini, diced
1 cup – Tomato Puree
2 cups – Vegetable stock
1 tbsp – Olive Oil
Salt as reqd
1/2 tsp – Italian Seasoning
Basil or oregano to taste

How to make:
In a deep pot add oil saute onions and vegetables one by one saute for couple of minutes then add 1 cup water and cover it and cook for 5 mins.

Now add in tomato Puree, vegetable stock, seasonings and pasta and cook for five minutes.

Serve minestrone soup hot with fresh grated Parmesan Cheese.
