Chickpeas Masala Rice

Spicy and healthy chickpeas masala rice for a perfect quick lunch and perfect for lunch boxes.

What you need:
Chickpeas / Channa – 1 cup, boiled 
Cooked Long Grain rice – 2 cups
Onion – 1 no, finely chopped 
Tomato – 1 no, chopped
Garlic – 1 tsp, grated
Ginger – 1 tsp, grated
Bay leaf, cardamom, cinnamon (1 each)
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Turmeric powder – 1/2 tsp
Oil – 1 tbsp
Salt as reqd

How to make:
Heat oil in a deep pan add bay leaf, cardamon, cinnamon and add onions, ginger, garlic and fry till it becomes light brown in color.

Add the chopped tomatoes and add the chick peas and fry for a minute. 

Now add chilli powder, turmeric powder, coriander powder, salt and saute for a min add rice and mix well.

Garnish it with coriander leaves and serve hot with raitha.
