Almond pumpkin soup at restaurants costs a bomb. This is a simple soup made with pumpkin and some almonds to give a rich flavor.
What you need:
2 cups – Pumpkin, skin peeled and diced
1 no – Onion, chopped
4 pods – Garlic, chopped
1 no – Bay Leaf
6 – 8 nos – Almonds, toasted and powdered
2 tbsp – Cilantro, chopped
2 cups – Veg Stock
1 cup – Hot water
1 tsp – Oil
Salt as reqd
How to make:
In a pot add oil then add onion, bay leaf and garlic stir them well. Add pumpkin and add water cover and cook till pumpkin turns soft.
Remove the bay leaf, cool them and blend until smooth. Return it to the pot add stock and cook them for a min add salt, pepper, almond powder, coriander and stir in.
Serve hot almond pumpkin soup with silvered almonds on top!!
