Brussel Sprouts Kurma

Have increased the usage of brussel sprouts, broccoli, variety of squashes in day to day cooking. Mostly because of its availability in near by stores and also the medicinal properties they possess.This is a simple to make kurma with less ingredients. 

What you need:
1 cup – Brussel sprouts, halved
2 nos – Carrot, thinly sliced
3 – Baby corns, thinly sliced
1 no – Onion, finely chopped
1 tsp – Ginger n garlic paste
1 tbsp – Coriander, finely chopped
1 tbsp – Mint leaves, finely chopped
2 nos – Cloves 
1 small stick – Cinnamon
1 no – Cardamom, crushed
1 tbsp – Oil 
Salt  as reqd

To be ground to smooth paste:

1/2 cup – Coconut 
1/2 tsp – Fennel seeds
5 nos – Green chillies (reduce if its more hot)

How to make:

Boil the veggies with 1/2 tsp salt till 70% they are cooked and keep aside.

Mean while ground the ingredients to a smooth paste with very little water.

Now in a pan heat oil add cloves, cinnamon, cardamom, ginger n garlic paste and onions saute well and then add the paste saute till raw smell leaves add salt mix them well and add veggies and water as per consistency reqd and cook in medium heat for 5 – 6 mins. Add mint and coriander leaves and its done.

Serve hot with variety rice, roti or phulkas.
