Thai Red Curry Veg Rice

Its one of the quickest rice which can be made in few mins. Bored of making thai red curry and want to finish the bottle of red curry paste this rice is a perfect treat.

What you need: Recipe inspired from Veggie Belly
2 cups – Cooked long grained rice
2 cups – Mixed veggies (Green beans, Tri color bell peppers, carrots – thinly sliced)
1 no – Onion, thinly sliced
1 to 2 tbsp – Thai red curry paste (accd to taste reqd)
2 tsp – Soy sauce
1 tbsp – Oil

1 tsp – Roasted white sesame seeds
2 tbsp – Fresh cilantro, chopped
Salt as reqd

How to make:
In a bowl add the red curry paste, soy sauce, and 2 tablespoons water and whisk it well to form a smooth paste. 
Heat oil in a pan add onion sauté till translucent then add veggies and sauté for couple of mins. Add the whisked red curry paste mix it well and saute well for a min add salt.


Add cooked rice mix well and top with roasted sesame seeds and chopped cilantro and serve hot!!
