Loads of Tindora in the refrigerator but SH hates curries with it. So made kurma with tomatoes and spices.
What you need:
1 cup – Tindora (slit)
1 no – Onion (chopped)
4 nos – Tomatoes (chopped)
2 tsp – Oil
Salt as reqd
To grind into paste with 1/4 cup water:
1/4 cup – Coconut flakes
5 nos – Dry Red chillies
1/2 tsp – Fennel seeds
1/2 tsp – Cumin seeds
1 tsp – Ginger chopped
How to make:
In a pan heat 1 tsp oil saute the Tindora with pinch of salt for 5 – 7 mins until they are roasted. Remove and set aside.
In the same pan add remaining oil once hot add curry leaves, onions saute well add tomatoes and cook till it turns soft.
Add the paste, salt and cover and cook for 5 -6 mins.
At the end add Tindora mix them well cook for a min add coriander leaves and switch it off.
