What you need:
3 nos – Tomatoes, chopped
1 no – Onion, chopped
1/4 cup – Beetroot, skin peeled n chopped
1 pod – Garlic, chopped
1 no each – Bay leaf, Cardamom, Cinnamon stick
1/2 tsp – Cumin seeds
1/4 tsp – Coriander powder
1 cup – Veg stock
1 cup – Water
1 tbsp – Fresh Coriander
1 tbsp – Butter
How to make:
In a pressure pan heat butter add bay leaf, cardamom, cinnamon stick, cumin seeds, black pepper saute well and then add onions, garlic saute well add tomatoes mix well add beetroot, salt and cook for 3 whistles.
One it cools remove the spices and blend it till smooth and sieve it. Transfer it again to the pot add stock and water.
Bring to slow boil and add coriander powder, pepper powder and more salt if reqd and simmer for 5 mins.
Serve hot with fresh coriander!!
