FULL MEAL SALAD

Sometimes you just have to have a really good salad for your noon meal.Loads of cherry tomatoes, fresh herbs,sweet raisins, couscous, seasonal veggies, fruits, sprouts can make a sooper healthy, delicious and beautiful salad!!

What you need:
1 cup – Couscous
1 cup – Cherry tomatoes , halved
8 nos – Raisins, halved
1 no – Carrot, finely chopped
1/2 cup – Red Pears, finely chopped
1/2 cup – Green pears, finely chopped
1/4 cup- Moong Sprouts
1/4 cup – Black Urad dhal sprouts
1/4 cup – Chickpea sprouts
2 nos – Wheat bread, cubed and toasted in olive oil
1/2 cup – Apple, finely chopped
1/2 cup – Cucumber, skin peeled and finely chopped
1/4 cup – Yellow Pepper, finely chopped
1/4 cup – Green Pepper, finely chopped
1/4 cup – Red Pepper, finely chopped
1/4 cup – Onion,finely chopped
2 tbsp – Parsley, chopped
2 tbsp – Olive oil Low Cal Mayonnaise
3 tbsp – Fresh Coriander, finely chopped
2 tbsp – lemon juice
3 tbsp – Olive oil
1 cup – Vegtock
Salt as reqd
Pepper as reqd

How to make:
Prepare couscous as per instructions with Veg stock and set aside to cool.


Mix Mayonnaise, parsley, coriander, lemon juice, olive oil, salt and pepper and the dressing is done.


Mix all other ingredients with couscous and add toasted wheat bread slices. Pour the dressing over and serve yourselves.

    This is yum! Love the look of it. And so many delicious ingredients, you simply cannot go wrong. And a total meal in itself.
