Poricha kootu recipe is a traditional Tamil Brahmin households recipe. This poricha kootu dish can be paired up with steaming hot rice and paruppu podi drizzled with ghee. Kootu is a south indian dish which is made with any vegetable variety especially with averakkai, pudlangkai and some hard vegetables. Moong dal is pressure cooked and then tempered with spices and ground masala paste is added which is made of coconut and chillies or even pepper version is made and termed as molakootal.

What you need: 
Snake guard / pudalangai – 250 gms (seeds removed n chopped)
Moong dhal – 1/2 cup (pressure cooked)
Turmeric powder – 1/2 tsp
Asafoetida pinch
Salt as reqd

To roast and grind to powder:

Urad dhal – 1 tsp
Black pepper – 1 tsp
Red chillies – 4 nos
Coconut gratings – 2 tbsp

To Temper:

Oil – 1 tsp
Mustard seeds – 1/2 tsp
Urad dhal – 1 tsp
Curry leaves – 1 sprig

How to make:
Cook the snake guard with turmeric powder and salt.

Add the ground powder and dhal mix well and pour the tempering over the cooked kootu.

Serve pudalangai poricha kootu with rice, paruppu podi, ghee and sutta appalam.
