Kadai Vegetables recipe is a quick dry curry which pairs well with Indian Breads as well as with Pulav varieties. Majorly it’s the Kadai Paneer / Kadai Mushroom which is pretty famous at Restaurants. This freshly ground masala is the key highlight and it makes the dish more palatable. Spice levels can be increased or decreased based on the family’s needs. I usually stick to this measurement which serves well for 4 people. Nothing like dry sabzi with hot phulkas smeared with ghee for dinner with some sweet or namkeen lassi. This is one of our family favorite combos.

Few chunks of paneer can also be added to this kadai vegetable recipe at the end. Kasuri methi shouln’t be given a miss in this recipe, cox that brings in the complete change of flavors in this recipe.

Simple to make spicy kadai vegetables and phulkas makes a perfect lunch meal.

  • 3 cups - Mixed vegetables (carrot, beans, potato, green peas - par boiled individually)
  • 1 cup - Diced Bell peppers
  • 1 no - onion, finely chopped
  • 1 no - tomato, finely chopped
  • 1 tsp - Ginger n Garlic paste
  • 1 tbsp - Dry Fenugreek leaves / Kasuri Methi
  • 2 tbsp - Fresh Coriander
  • 2 tbsp - Oil
  • ¾ tsp - Salt or as reqd
  • Dry roast and grind coarsely:
  • 8 nos - Red chillies
  • 1 tbsp - Coriander seeds
  • 1 tsp - Cumin seeds
  • 1 no - Cardamom pod
  • 2 nos - Cloves
  • 1 " inch - Cinnamon stick
  • 1 tsp - Kasuri Methi
  1. Heat oil in a pan add onions, ginger - garlic paste saute well add tomatoes, salt and cook with closed cover for 3 minutes or until tomatoes softens.
  2. Keep the veggies par boiled with pinch of salt.
  3. Add the veggies, ground masala, half cup ater and cook in medium heat for 3 to 4 minutes.
  4. Add bell peppers give a toss, add crushed fenugreek leaves mix well cook for couple of minutes switch off the heat, garnish with fresh coriander leaves and serve with hot phulkas.
