A quick stir fry with loads of veggies and fresh greens packed for lunch to work makes a healthy lunch.

What you need:
1 cup – Chickpeas, cooked till soft
2 cups – Triple colored bell peppers, chopped
1 cup – Methi leaves, finely chopped
1 no – Onion, finely chopped
1 tsp – Red chilly powder
1/2 tsp – Cumin seeds
1 tsp – Extra virgin olive oil
Salt as reqd
1 tbsp – Fresh coriander

How to make:
In a pan heat oil add cumin seeds once it splutters add onions saute well add methi and bell peppers. Mix them well add salt now add chickpeas.

Add chilly powder mix well and cook in medium heat till raw smell goes. Add chopped coriander and serve hot with methi phulkas.
