Make your weekend meal quick and scrumptious. Mixed rice with some spicy curry works well for pulao and phulkas.

Try this quick baby corn and carrot pulao with some spicy paneer curry and phulkas. Also made carrot and cucumber salad with some carrot lemonade. This makes a complete yummy platter. 

What you need for Pulao:

Basmati rice – 2 cups, cooked rice
Baby corn – 6 nos, sliced and par boiled
Carrot – 2 nos, sliced and par boiled
Beans – 3 nos, chopped
Onion – 1 no, finely chopped
Coriander leaves – 2 tbsp, finely chopped
Mint leaves – 2 tbsp, finely chopped
Garlic – 2 nos, finely chopped
Ginger – 1 tsp, finely chopped
Red chilli powder – 1/4 tsp
Pepper powder – 1/4 tsp
Garam masala – 1/4 tsp 
Salt as reqd
Oil – 2 tbsp 

How to make:
In a pan heat oil add onions, garlic, ginger and saute well.  Add carrots, baby corn, beans, coriander, mint leaves and saute well.

Add salt, red chilli powder, pepper powder, garam masala and mix well saute for a min.

Now add rice mix well and serve hot!!

What you need for Spicy Paneer Curry:
Paneer – 2 cups, squared and pan fried
Onions – 2 nos
Tomatoes – 3 nos
Green chilli – 1 no
Ginger – 1 tsp
Garlic – 2 tsp
Red chilli powder – 1 tbsp
Coriander powder – 1 tsp
Turmeric powder – 1 /2 tsp
Garam masala – 1/2 tsp
Salt as reqd 
Oil – 2 tbsp

How to make:
Puree onions with garlic, ginger and green chilli and puree tomatoes seperately.

Take a pan heat oil add cumin seeds once it cracks add onion mix add salt and saute till raw smell goes.

Now add tomato puree, red chilli, coriander, turmeric, garam masala mi well and cook till oil leaves sides.

Add sauted panerr add coriander leaves and switch it off. Serve with pulao and phulkas.
