MIXED FRUIT THUMBPRINT COOKIES (Eggless) – HBC 3

My hubby loves these jam treats, baked mixed fruit thumbprint jam Cookies for third Home Baker’s Challenge(HBC) initiated by Priya’s Versatile and hosted by Virundhu Unna Vaanga.

All purpose flour – ¾ Cup 
Baking powder – ¼ Tsp
Salt – A pinch 
Unsalted butter – 2 Tbsp (Room Temperature)
White sugar – 3 and ½  Tbsp 
Vanilla essence – ½ Tsp 
Mixed fruit crush – 1 and ½ Tbsp
Mixed fruit jam for filling 

How to make:
Sift the flour, salt and baking powder together in a mixing bowl. Set aside. 

In another bowl, cream the softened butter and sugar. Add the vanilla essence and mixed fruit crush to the bowl and combine well with the butter mixture.

Fold in the flour mixture with the butter mixture and form a dough.  Cover the dough with plastic cling film and refrigerate for ½-1 hour.  Preheat the oven to 350 F/175 C.

Line your cookie sheet with a parchment paper. Make small balls with the dough and place the balls on the cookies sheet and press down slightly to flatten out. With the help of your thumb make a small hole in the middle of the cookies.
 
Bake the cookies for about 8-12 min. Do not bake them beyond 12 minutes. Take out the cookies from the oven and using the teaspoon again press out the hole in the cookies. You will not able to do this after the cookies have cooled. 

Once cookies have cooled, fill in the mixed fruit jam in the little holes in the cookies.  Ready to bite.
