VADA CURRY – Side dish for Idli and Dosa

Vada curry is a delicious side dish for idli n dosas. The famous combo is set dosai and vada curry most of hotels in Tamil nadu serve this combo. Enriched with spices this curry makes a perfect pair with Idli too. Majorly it was started by the hotels to use off the leftover vadais made the earlier day.

Ingredients for vada:
1/2 cup – Channa dhal
3 nos – Red chillies
1/4 tsp – Fennel seeds
Salt – 1/2 tsp or as reqd
Hing – gen pinch
How to make:
Soak for 3 hrs and grind to coarse paste without adding much water and mix salt and hing to it.

Rub oil in idli moudls and make into small vadai shaped and steam for 10 minutes or until done. Remove from heat and allow to cool.

Ingredients for gravy:
1 no – Onion, chopped
2 nos – Tomatoes, chopped
2 nos – Green chillies, slit
1/2 tsp – Turmeric powder
1 tbsp – Sambar powder
1 inch – Cinnamon stick
2 nos – Cloves
Salt – 1 tsp or as reqd
Oil – 1 tbsp
1 sprig – Curry leaves
2 tbsp – Fresh coriander

How to make:
Heat oil in a pan fry the cloves, cinnamon stick, add onions, curry leaves, green chillies and saute well.

Add tomatoes, turmeric powder, salt and cook till it softens. Add 2 cups water, sambar powder and bring to boil.

Crumble the vadais and add to the gravy, cover and cook in medium heat for another 3 – 4 mins or until gravy thickens switch it off add fresh coriander and serve hot with set dosai and idli.
