ANDALUSIAN COURGETTE TORTILLAS

Andalusia is one of largest community in Spain their cuisine is very much varied depending upon the region itself. Courgette is nothing but Zucchini and Omelet is referred for tortillas. This makes a perfect breakfast with a glass of cranberry tea.

What you need: Recipe from Priya’s Versatile recipes
Eggs – 3
Zucchini – 1 sliced
Mushrooms, Bell pepper – 1/2 cup (optional)
Spring onions – 1/2 cup (chopped)
Oil – 1/2 tsp
Salt as reqd
Pepper as reqd

What you need: 

Heat some oil in a pan and sauté courgettes till they are brown. Sprinkle some salt and pepper. Remove it and keep aside.

Now sauté spring onions, mushoorms n bell peppers, beat the eggs well with salt and pepper.


Add the sauté spring onions in a baking pan , arrange half the courgettes. Pour in the egg mixture and arrange the other half of egg mixture and bake at 350 F for 10 – 15 minutes.
