SPINACH PANEER MALFATTI RECIPE
Spinach paneer malfatti is a steamed spinach and cottage cheese (paneer) dumplings in a simple yet spicy tomato gravy makes a perfect weekend dinner! The melted cheese on top of the dish makes it enticing. This makes a great single meal with all the required nutrients.
This easy to make one bowl spinach malfatti recipe is a great deal on paleo diet. Indian paleo vegetarian recipes are so much limited and and restricted to only curries and gravies. Such wholesome paleo recipe makes a complete filler. Instead of plain flour almond meal is replaced to make it a perfect paleo dish.
For the Dumplings:
Palak (Spinach) – 2 cups, finely choped
Paneer (cottage Cheese) – 1 cup, crumbled
Green chilli – 1/2 tsp, finely chopped
Plain Flour or Almond meal – 2 tbsp
Salt as reqd
For the Tomato Gravy:
Tomato Puree – 1 cup
Garlic – 1 tsp, chopped
Onion – 1/2 no, finely chopped
Red chilli Flakes -1 tsp
Fresh Cream – 4 tbsp
Oil – 2 tbsp
Salt as reqd
Cheese – 1/4 cup, grated
How to make Dumplings:
Blanch the spinach and squeeze the water. In a bowl add ingredients make into balls and steam for 5 – 7 minutes and keep them aside.
Heat a tbsp of butter in a non stick pan and toss the dumplings until they turn golden brown.
How to make the gravy:
Heat oil in the pan add garlic, onion and saute for a minute. Add tomato puree and cook till it thickens.
Now add red chilli flakes, salt bring to gentle boil and add fresh cream mix well and remove from heat.
Pour the tomato gravy in a baking dish, place the dumplings, sprinkle cheese and bake for 10 minutes.
Serve the spinach paneer malfatti hot !!
