Dhokla is a famous Gujurati snack, usually made with chickpea flour / besan. Green Moong Dhokla makes a perfect guilt free and gluten free snack variety. This version of Dhokla is made with whole green moong which is protein rich and nutritious especially for kids who run away from lentils. Green moong with skin is ground into smooth batter and steamed until fluffy and aromatics spices are tempered and poured over. Further to the green moong grated vegetables like bettroot, carrot can be added which will enhance the nutrition level. Steamed guilt free Gujarathi delicacy is made at home with less ingredients.
Ingredients for batter:
1 cup – Green moong dal
2 nos – Green chilly
1 inch – Ginger
1 tsp – Fruit salt (ENO)
Pinch of asafoetida (hing)
3/4 tsp – Salt or as reqd
Ingredients for Tempering:
2 tbsp – Cooking Oil
2 tsp – Sugar
1 tsp – Mustard seeds
2 tsp – White sesame seeds
2 sprigs – Fresh curry leaves
4 nos – Green chili, sliced
2 tbsp – Freshly grated coconut
1/4 cup – Coriander mint chutney
Soak moong dal for 2 hours fully immersed in water.
Drain the water completely and grind with green chilly, ginger to smooth thick batter add very little water while grinding. Transfer to a bowl, add salt and mix well.
Grease the plate or the bowl in which dhokla is to be steamed.
Switch on the steamer or the pressure cooker for steaming.
Mean while add fruit salt (ENO) to the batter give a nice mix and transfer to the greased plate / bowl.
Place the plate in the pressure cooker and close with the lid or use as per steamer instructions.
Keep checking with a tooth pick, when it comes out clean the dhokla is done approx 10 – 12 mins.
Allow to cool transfer to a tray, prepare and pour the temperings over the dhokla, slice them and serve with green chutney.
